1. Broken. 2. Fermentation. Fermentation is to produce alcohol and carbon dioxide from the sugar in grape peel juice through the action of yeast. the pre-fermentation process of red wine is mixed with peel juice, and yeast has been incorporated into the juice when the grape is broken, because there is yeast in the white frost on the grape skin. so self-made wine can not be fermented without adding yeast.

The best fermentation temperature is 15: 25 ℃, which should not exceed 35 ℃, but it is easy to dissipate heat when fermented in a small container, which can reach no more than 32 ℃.

When the leather juice is put into a container, it usually begins to ferment after a day. At the beginning of the liquid level is calm, when a weak carbon dioxide bubble has been produced, indicating that the yeast has begun to multiply. After 2 or 3 days, a large amount of carbon dioxide is released, the dregs float into a cap, taste fruit juice, the sweetness decreases gradually, and the wine taste increases gradually.

During fermentation, the floating grape skin should be pressed into the juice twice a day with disinfection chopsticks, on the one hand, to prevent the grape skin from becoming moldy and sour, at the same time, the pigment on the skin can be dipped into the juice, and CO2 can be discharged to make the yeast get oxygen and ferment more vigorously.

After the best part, the fermentation momentum begins to weaken, at this time, sugar can be added, which is dissolved with grape wine, rather than hydrated sugar, and then added. After the white sugar is completely dissolved, it continues to ferment in the container. Finally, carbon dioxide is released to a weak and near calm, the alcohol flavor is very strong, the sugar content is reduced to less than 1%, and the juice begins to clear, that is, the end of fermentation, pressing, and separating the skin juice.

3. Squeeze. The method of pressing is to squeeze or twist with a clean cloth bag or gauze, and the red wine liquid flows out, which is called Yuanjiu.

4. Add egg white to clarify. About 30ml grape wine with egg white. The method is to beat the egg white into a foam, stir and mix fully with a small amount of wine, then add to the wine, then stir and rest until the wine is clear and transparent, and discard the sediment.

5. Add sugar to the wine. Most people's habit is that wine should be sweet, therefore, the grapes need to be mixed with sugar, the amount of sugar is about 1214%, and the sugar should be dissolved by mixing with the original wine.
