Truffle is rich in protein and enjoys the reputation of "black diamond". At the same time, as the king of the world's treasures, truffles are as expensive as gold, and they are the best ingredients that chefs in high-end hotels and restaurants around the world look forward to every year. So why are truffles so expensive? What kind of environment did you grow up in? Where can I find it in China?

Why are truffles so expensive?

1. Truffles are rich in protein, 18 kinds of amino acids (including 8 essential amino acids that cannot be synthesized by the human body), unsaturated fatty acids, multivitamins, zinc, manganese, iron, calcium, phosphorus and selenium, as well as a large number of metabolites such as sphingomyelins, cerebrosides, ceramides, triterpenes, androsterone, adenosine, truffle acid, sterols, truffle polysaccharides and truffle polypeptides. It has high nutrition and health care value.

Truffle and Qiongzhen Ganoderma lucidum Lin Zhong Ling, also known as the king of immunity, is the best food to enhance the body's immunity.

2. Truffles are extremely picky about the growth environment, and the growth of truffles must have three conditions: host tree, suitable soil and climatic conditions. Truffles cannot grow with slight changes in sunlight, moisture and the pH of the soil.

3. Truffle can not be cultivated artificially, but only through the gift of nature, so the yield is extremely unstable.

4. It takes time and effort to collect truffles. Each truffle is found one by one through hounds or sows, which is very time-consuming and laborious.

5. Truffle is a very delicate fungus. If you want to preserve it well, you must wrap it in the soil of the place of origin. Before eating, gently wipe off the soil adsorbed on the surface of the fungus with fine cotton cloth and wash it with slow running water.

Second, what environment does truffle grow in?

1. Truffles grow in the soil and are stem truffles attached to the roots of pine trees. They contain large amounts of water and trace mineral elements such as potassium, calcium, magnesium, iron and fluorine. Unlike ordinary mushrooms, mushrooms are soft and juicy, but the texture is harder. Prefer alkaline soil, high-quality truffles are mainly produced in calcareous topographic areas, such as Alba in Italy, Perigo in France, Yunnan in China, etc., all located in calcareous topographic areas.

2. The nutrients of truffles come from attached roots and soil. If truffles have been grown in a place, the nutrients of the land and plants will be completely absorbed by truffles, and nothing else can be grown for a period of time. In the process of growing up, I can't stand any subtle environmental changes, and it's amazing to be picky about the environment, but at present, Western countries have achieved semi-artificial growth.

3. Truffles especially like to grow under pine, oak, poplar, willow, hazel and Linden trees. The color and smell vary from tree species to tree species. Today, mechanized farming methods, soil sprayed with pesticides, excessive or low rainfall, and changes in forest tree species are also the main reasons for the massive reduction in truffle production in the 20th century.

Where can I find truffles in China?

Chinese truffles are mainly produced in the Jinsha River Basin, and many varieties of truffles such as black truffles and white truffles have been found, which is one of the specialties of Jinsha River. With Panzhihua as the center, within 200 kilometers is the core producing area of Chinese truffles, so Panzhihua is known as the hometown of Chinese truffles.

There are also a small amount of truffles growing in the high-altitude mountains of Taiwan Province in China, which are very similar to those of France / China and belong to close relatives. However, Asians generally do not have much contact and understanding of this delicacy, so they do not operate commercially.

At the end of the 20th century, Chinese scientists discovered the distribution of black truffles in the southeast of the Himalayas. In fact, truffles are called "motherless fruits" in ethnic minority areas such as Tibetans in southwest China and Yi people in Panzhihua, Sichuan Province.
