III. Nutrition of black wheat

1. The protein content of black wheat is basically between 17-20%, and the quality is better. The total amino acid content and essential amino acid content of black wheat are higher than that of common wheat. Among the eight essential amino acids needed by human body, black wheat is much higher than common wheat.

2. The fat content in black wheat is generally 1-3%, in which the content of unsaturated fatty acids is very high, while the content of linoleic acid (C18pur1) and linolenic acid (C18pur3) in human essential fatty acids accounts for about 30%.

3. Black wheat is rich in minerals and trace elements, especially iron, potassium, iodine and selenium, which are about 1340%, 130%, 80% and 110% higher than common wheat, respectively.

4. The contents of B and C vitamins in black wheat are higher, in which vitamin B1 and B2 are about 80% and 50% higher than common wheat, respectively.

5. The content of dietary fiber in black wheat is very high, which is about 2-3 times higher than that of common light-colored wheat.
