V. Harvest and processing
Jujube is picked when the pedicel turns red and brown after several frosts after Frosts Descent in November in winter, cut off the fruit branches and store them in a cool place. After ripening for 7 to 10 days, the jujube can be sold fresh or dried and pressed in juice.
