Bamboo shoots have been regarded as "treasures in dishes" in China since ancient times. Bamboo shoots are a traditional Chinese delicacy with a crispy taste and a long history of eating and cultivation. In the Book of songs, there are poems such as "add beans, bamboo shoots and fish fish" and "its sounds, but bamboo shoots and cattails", indicating that people have eaten bamboo shoots for 2,500 or even 3000 years.

How to make full use of bamboo shoot resources, reasonably select and dig bamboo shoots and increase bamboo shoot yield without affecting the normal growth and development of bamboo forest?

First, it depends on the time of bamboo shoots. Bamboo farmers have a summary of their experience that "winter bamboo shoots before nine are afraid of spring rain, bamboo shoots spring up after nine years are happy with spring rain; winter bamboo shoots before nine are rotten in spring, and bamboo shoots are springing up after nine years". Affected by the seasonal climate, the bamboo shoots formed before "the Winter Solstice" are called winter shoots due to the influence of seasonal climate. Most of the winter shoots are sad to survive the spring rain, and the mature rate of bamboo shoots is low, so it is appropriate to dig rather than stay. The bamboo shoots formed after "the Winter Solstice" are called spring shoots. Spring shoots can break out of the ground in response to the spring rain, and the mature bamboo rate is high, so it is appropriate to stay and not dig. After the spring bamboo shoots are unearthed, the woodland should be checked frequently, and the bamboo shoots should be excavated in time.

Second, it depends on the shape of bamboo shoots. The best season for digging winter bamboo shoots is before and after "the Winter Solstice". If you dig too late, it will inevitably hurt the budding bamboo shoots and affect the growth of bamboo. If the time of digging bamboo shoots is slightly delayed due to bad weather or labor shortage, the digging or retention should be judged by the shape of bamboo shoots. The experience of bamboo farmers is: "it is pointed at both ends and bent in the middle, rotten into sauce every spring, thin at the top, thick at the bottom, and Hsinchu in spring." If the bamboo shoots are curved, pointed or flat, or if the bamboo sheaths are aged and loose, it means that the young bamboo shoots are underdeveloped and should be dug; if the stems of bamboo shoots are plump in the shape of a "pagoda" and the roots are well developed, they should not be dug.

Third, it depends on the site conditions. "the bamboo shoots in the high mountains are not excellent, the bamboo shoots on the flat ground become bamboo, the hook pole comes out on the slope, and the good bamboo comes out on the slope." Digging bamboo shoots depends on the site conditions. generally, the higher the topography of the bamboo forest is, the worse the nutritional condition of bamboo shoots is, the slower the growth and development is, the later the unearthed bamboo shoots are, the lower the mature rate of bamboo shoots is, and the poor quality of bamboo wood can be dug properly.

Fourth, it is necessary to have the technology of "looking for gold across the earth". Bamboo leaves with yellow spots are pregnant bamboo shoots, and shoots can be obtained by digging at the cracks in the topsoil around them. Some people divide Mao bamboo into the so-called "male" and "female". If the first section of mature bamboo branches into pairs and grows symmetrically, it is a female bamboo with bamboo shoots around it; if the first section is a single branch, it is a male bamboo with no shoots. After finding the pregnant bamboo shoot, you should carefully observe the drooping direction of the top tip of the mother bamboo. The place where dew drops fall on the bamboo shoot is the place where the bamboo shoots grow. In addition, there is a main bamboo whip in the lower part of each bamboo. The direction of the bamboo whip is parallel to the plane composed of the first symmetrical bamboo branch, and the shoot is always born in the stretching direction of the bamboo whip.

In a word, when selecting and digging bamboo shoots, we should pay attention to the density and uniformity of bamboo shoots, so as to prevent one from losing the other. After digging bamboo shoots, be sure to cultivate soil and bury whips in time, and holes and pits should be filled with soil to prevent stagnant water and rotten whips.
