According to legend, at the end of the Eastern Han Dynasty, heroes competed with each other, the war raged, and the people lived in poverty. It was the custom of every household in Muzhou (Fuchun County, today's Jiande) to use large tile jars to pickle nine-head mustard as daily dishes. but at that time, when people were pickling, they could not avoid the vegetables rotting in the jars, and often toiled to marinate a jar but pour out most of the dishes.

Sun Quan's mother, Wu Guotai, is from Muzhou. She is intelligent, dignified and ingenious. Although she lived in the city at that time, she also pickled the mustard herself. In order to prevent the vegetables from rotting during the pickling process, she placed the pickle jar upside down so that the waste liquid naturally drained out. In this way, the pickled vegetables in her family never rotted again. This method is vividly called "inverted Benedict" by the local people, and "inverted vegetables" was born under the skillful hands of Wu Guotai. This method has been spread in the south of the Yangtze River for nearly a thousand years and is still used by the people.
